Skölj gurkan och skrapa bort kärnhuset med en sked. Riv gurkan på den grövsta sidan av ett rivjärn och vrid sedan ur överflödig vätska. Totalt ska du ha cirka 5 dl gurka.

Blanda yoghurt, pressad vitlök, gurka, alla kryddor och olivolja. Smaka av med svartpeppar eller vitpeppar.

Låt tzatzikin stå i kylen innan servering, gärna minst 30 minuter eller över natten.
